It has a light, soft consistency that cleanses and nourishes the body. It is a mixture of mung beans, rice, seasonal vegetables, and spicesa complete one-pot meal. 1. In a fine-mesh strainer, rinse the mung beans and rice under cold running water. 2. In a medium glass bowl, place the mung beans and rice and cover completely with water. Soak for 3 hours and drain. 3. In a medium pot, heat 1 tbsp ghee over medium-low heat. Add the mung beans, rice, and cinnamon and saut for 2 to 3 minutes. 4. Add 4 cups boiling water to the pot. Cover and simmer for about 45 minutes until the beans and rice are tender. 5. In a saucepan, heat the remaining ghee over medium-low heat. Saut mustard seeds for 2 to 3 minutes, until they begin to pop. Add ginger, cumin seeds, and fennel seeds and saut for another 1 to 2 minutes. Add the turmeric, coriander, and salt to taste. 6. Stir the spices into the pot. Add more water as needed for a creamy consistency and texture. 7. Garnish with the cilantro, coconut, and lime.
