A perfect example of this is the Old Fashioned. In 1888, the first known recipe for the Old Fashioned appeared in The Bartenders Manual by Theodore Proulx, and it was already an old cocktail by then. The Old Fashioned has come and gone many times within our drinking history but was resurrected by the television show Mad Men and mastered by bartenders who refused to create anything other than the pre-Prohibition version. We love the Old Fashioned because it is simple to make and really allows the character of the whiskey to shine through. Pour the whiskey, simple syrup, and bitters into the mixing glass. Add ice and stir until very cold, about 15 seconds. Strain into the glass over new ice. Using the peeler, make an orange twist about 2 inches long. Express the oils from the peel, rub the twist on the rim, and put into the drink. For a decadent variation, try maple simple syrup. Combine 1 cup each of maple syrup and water in a saucepan. Add a few whole cloves, 1 teaspoon each of allspice and cardamom, or similar spices. Add a pinch of sea salt. Boil until it is reduced by about half. Let cool. Read more
