To create the grooves that distinguish gnocchi from other shapes of pasta, you dont need any special tools (although there is a tool that exists for just this purpose). You can simply roll the gnocchi across the tines of a regular fork. Recipe (serves 4) 1. Bring a pot of generously salted water to a boil. Add the potatoes and boil until tender, about 15 minutes. Drain and let cool. Using a ricer or a potato masher, mash the potatoes. Stir in the flour and egg. Transfer the potato mixture to a floured surface and knead into a smooth ball. Wrap the dough in plastic wrap and let rest at room temperature for 5 minutes. 2. Cut the ball of dough into 4 pieces. On a floured work surface, roll each piece into a log about inch thick. Cut crosswise into - to 1-inch-long pieces. Press and roll each piece across the tines of a fork to create ridges on one side. Place the rolled gnocchi on a floured baking sheet as you go. 3. Bring another pot of generously salted water to a boil. Add the gnocchi and cook until they rise to the surface, 3 to 5 minutes. 4. Meanwhile, in a large saut pan, melt the butter over medium-high heat. Add the tomatoes, garlic, and herbs. Cook, stirring often, until the butter browns and tomatoes blister, 6 minutes. Using a slotted spoon, transfer the cooked gnocchi to the pan. Toss to coat. Season with salt. Divide the gnocchi among four plates and serve immediately.
