For a fun picnic dish, make them in small Mason jars, cap them, and bring them along in a cooler stocked with plenty of ice to keep them cold. Directions: 1. In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir to mix well. Divide the mixture equally among 10 (4-ounce) ramekins or custard cups. 2. In a large bowl, using an electric mixer, whip the cream until stiff peaks form. 3. In another small bowl, whisk the sweetened condensed milk and lime juice. Gently fold the lime juice mixture into the whipped cream until incorporated. Spoon the mixture into the ramekins or custard cups on top of the graham cracker crust. Chill thoroughly, for at least 1 hour, and serve cold. Cover any leftovers with plastic wrap and refrigerate for up to 3 days. Substitution Tip: I love to make this with tiny, extra-tart key limes, but you can substitute regular limes if you like. Add extra flavor by including 1 tablespoon finely grated lime zest.
