Vegan options have come a long, long way. Enjoy! INSTRUCTIONS: 1. Preheat the oven to 340F. Line two baking sheets with parchment paper. 2. In a large bowl, using an electric mixer on medium speed, cream the vegan butter, canna-coconut oil, and both sugars together. Beat in the vanilla. 3. In a medium bowl, sift the flour and cocoa together, then mix in the baking soda and salt. Stir the dry ingredients into the wet, mixing by hand until crumbly. Add the almond milk and continue to mix by hand until a thick cookie dough forms. Stir in the chocolate chunks. The dough will be thick, but sticky enough to roll into balls. Roll the dough into tablespoon-size balls and place 2 inches apart on the prepared baking sheets. 4. Bake until the edges are firm, about 10 minutes. The cookies will still be soft in the middle. They will firm up as they cool. Press in more chocolate chunks to the top of the cookies as they come out of the oven. 5. Allow the cookies to cool for 15 minutes on the baking sheet on a wire rack. Cool completely before storing it. Storage: Keep the cookies in an airtight container for 4 to 5 days or freeze them for up to 6 months. INGREDIENTS: 6 tablespoons vegan butter 2 tablespoons Canna-Coconut Oil 1/2 cup granulated sugar 1/2 cup packed light brown sugar 2 teaspoons vanilla extract 1 cup all-purpose flour 2/3 cup unsweetened cocoa powder 3 1/2 ounces vegan chocolate, plus more for topping, chopped into small chunks Read more
